And as far as the piglins are concerned so long as you're wearing gold you'll never have to fight them anyways unless you encounter the brutes in bastions.

Majority of the mobs you're going to encounter are going to be undead and the same concept of multiple hits with the sharpness still applies to the piglins and blaze. In the nether is certainly where smite enchantment shines. My argument is that if it's going to take multiple hits to take out the creepers and spiders regardless of which enchantment you have on the sword isn't it more beneficial to also be able to one-hit the skeletons and the zombies? I took it a step further and put sharpness V on a diamond axe and performed axe crits on the spiders and the creepers and it still wouldn't one hit a creeper, let alone the undead mobs that it's not tailored to.

What I found was that the Smite sword is able to one hit kill both zombies and skeletons, but the Sharpness sword would not one hit creepers and spiders. Since Smite is tailored for undead mobs and sharpness is for all others I wanted to see which one would Dole out the most damage to its respective target. I performed an experiment where I put Smite V on one diamond sword and Sharpness V on another. Naturally in a PVP world this would not apply, however when fighting off general hostile mobs in the overworld & nether I think sharpness is an overrated enchantment for swords and even axes.
